This lovely coffee is grown by our friend Tony Castro in the Guinope municipality of Honduras on a farm appropriately called La Joya (the jewel). Tony’s farms sits at an altitude of 5200 – 5700 feet. This coffee is a veritable fruit bomb of flavor, giving us notes of honey dew, black cherry, and plum raisin. The finish is reminiscent of semi-sweet chocolates. When thoughtfully brewed, this coffee yields a bright, clean cup with complex acidity. We recommend a simple V60 or Chemex, but you really can’t go wrong with any brewing device. This also makes for an incredible cold brew!
